I dunno, with the GC/GF if I was getting someone else to do it I'd go for the latest and best spec'd 'cos you've gotta change all your wire/dash/air anyway so why remain stuck in pre-history?
I can see your point with early Legacy/Liberty transplants, but Imprezas are a much more forgiving beast in this regard, even GDs. Think it might have a lot to do with a more developed rally build for parts interchange in service parks or something.
There are a number of WS that do this type of thing very well, notably in Wangara, Kenwick and Kelmscott.
Let your fingers do the walking and a few people clue you in, then decide who you're happiest with.
