My main reason for JB would be running my iPhone as a wireless access point to give my iPad 3G access.
iTunes and apps work as they would normally do. You can download apps and they will be added to iTunes, iTunes thinking that you purchased the app. Syncing works as it normally would as well.

http://apptrackr.org is where i get all my apps from. They get updated daily.

iPad jailbreak is the exact same as the iPhone (its the same OS as such).

Not sure about the wireless access point yet for the iPhone to iPad. Will need to have a look at that, as that is a major reason why i didnt buy the iPad.
