Thanks go to our resident bbq rib master Tristan for sourcing bulk pork ribs. As a result I have applied the dry rub (my own selection) to some of the racks and set them to cure in the fridge until tomorrow morning. Smoking will commence around 8am tomorrow.

3 hours of smokin and all is well. Note the smoke exiting the vent at the top of the smoker. This allows you to regulate amount of smokey goodness.
